Cottage Cheese Rolls with Apple – Recipe for soft, protein-rich rolls made with cottage cheese, apple, and cinnamon. These cottage cheese rolls are so popular, and now I’ve made a new version with grated apple, oats, and cinnamon. They’re made from cottage cheese, honey, and eggs blended into a smooth, thin batter, then mixed with flour, oats, vanilla sugar, cinnamon, cardamom, salt, and baking powder. The dough is portioned onto a baking tray using two wet spoons, making about 8–10 rolls in total. The rolls are topped with pearl sugar and chopped hazelnuts before baking until golden.
When the cottage cheese rolls come out of the oven, they will sink a little — that’s perfectly normal. It’s important to let them cool on a wire rack so they don’t become soggy. This recipe for cottage cheese rolls is inspired by my very popular recipes for cottage cheese pizza rolls — the original version is made with ham and cheese, and I also have another variant with spinach, feta, and sun-dried tomatoes.

Make the cottage cheese rolls gluten-free by using equal parts oat flour and red gluten-free Finax flour, along with 1.5 tsp of baking powder.

Preheat the oven to 200°C (fan-assisted).
Blend the cottage cheese, eggs, and honey together until smooth. Add the flour, oats, grated apples, vanilla sugar, cinnamon, cardamom, baking powder, and salt, and mix until you have a thick dough.
Line a baking sheet with parchment paper and use two wet spoons to place 8–10 portions of dough on the sheet. Sprinkle with pearl sugar and chopped hazelnuts.
Bake the rolls for about 25 minutes. Let them cool on a wire rack before enjoying. Bon appétit!
