Pizza Rolls with Cottage Cheese and Spinach – Recipe for easy and delicious protein-rich pizza rolls with cottage cheese, eggs, cheese, spinach, feta, and sun-dried tomatoes. These vegetarian pizza rolls are so tasty and super easy and quick to make. They’re made by blending cottage cheese and eggs into a smooth, thin batter. Then flour, salt, baking powder, and oregano are mixed in. After that, grated mozzarella, chopped fresh spinach, tomato purée, sun-dried tomatoes, and feta are folded into the dough.
The dough is placed onto a baking tray using two wet spoons, making 10 pizza rolls in total. The pizza rolls are topped with a bit of extra grated mozzarella before being baked until golden.
When the pizza rolls come out of the oven, they’ll deflate slightly. It’s important to let them cool on a wire rack so they don’t become soggy. This recipe is slightly inspired by the popular cottage cheese pizza, which many of you love to bake. You can add any toppings you like to the dough. The tomato sauce I use here is just tomato purée, but you can also use pizza sauce from the store—or make your own.

Preheat the oven to 200°C (fan).
Blend the cottage cheese and eggs together until smooth and runny. Add flour, salt, baking powder, and oregano, and mix into a thick dough. Then add tomato purée, grated cheese, spinach, sun-dried tomatoes, and feta cheese, and stir until well combined.
Line a baking tray with baking paper and place 10 scoops of dough onto the tray using two wet spoons. Sprinkle with extra grated mozzarella on top.
Bake the pizza rolls for about 25 minutes. Let them cool on a wire rack and enjoy. Bon appétit!
