Blueberry Pie
Pour blueberries into a 28 cm diameter pie dish. Sprinkle potato starch and sugar over the blueberries and mix them together.
Oat Topping
Preheat the oven to 175°C (fan/convection).
Melt butter in a saucepan and remove it from the heat. Add syrup, sugar, and heavy cream. Then, add oats, flour, baking powder, and salt, and mix everything well into a sticky, thin dough.
Pour the dough over the blueberries so they are completely covered. Bake the pie in the oven for about 30-40 minutes until it is golden and crispy.
Serve the pie cooled with, for example, crème fraîche or vanilla ice cream. Enjoy!
