Puff pastry tart with tomato and mozzarella – Recipe for easy and delicious puff pastry pie ala caprese with pesto, tomatoes and mozzarella. This pie with puff pastry is super delicious and really easy to make. The pie consists of puff pastry with pesto, tomato slices and mozzarella slices that are baked. The pie is then topped with pine nuts, parmesan and fresh basil. The pie is inspired by the lovely tomato salad caprese, which consists of tomatoes and mozzarella.

The tomato slices are sprinkled with salt and placed on kitchen paper, which can absorb the liquid, otherwise the tomatoes will release too much liquid during baking, and then everything will be too wet. The same applies to the mozzarella slices, but they should not be salted.

It is a super good pie which is perfect to serve for dinner with a salad on the side or as part of a buffet or for the forest trip. Puff pastry tart with tomato and mozzarella

Preheat the oven to 200°C (fan-assisted).

Slice the tomatoes and place them on kitchen paper. Sprinkle with salt and place another piece of kitchen paper on top. Let them sit for 15 minutes. Do the same with the mozzarella slices, but without salt.

Roll out the puff pastry on a baking sheet lined with parchment paper. Spread pesto in the middle, leaving a 1-2 cm border of pastry around the edges. Arrange the tomato and mozzarella slices alternately on top of the pesto. Brush the edges with beaten egg and bake the tart for 20 minutes.

Garnish the tart with pine nuts, fresh basil, and parmesan. Enjoy your meal!
