Banana buns with chocolate
Put the yeast, milk, yogurt, bananas, acacia honey, and cardamom intp a mixing bowl. Blend with a hand-held blender until there are no more lumps. Add the flour and salt and knead the dough with the dough hook. Add the Øland’s flour first and then the softened butter while kneading. The dough needs to be kneaded well until it releases from the bowl and is glossy and elastic. Cover with a damp dish towel and let the dough rise for 1.5 hours at room temperature.
Heat the oven to 200 C convection.
Pour the dough out onto a floured surface. Make a hollow in the middle of the dough and fill it with the chopped chocolate and eggs. Chop the dough well into small pieces so that it all mixes well together. Use a spatula or a palette knife. Divide the dough into 14-16 equal pieces. Line a baking sheet with baking paper and place the banana buns on the paper. Cover them with a tea towel and let them rise for about 15 minutes.
Bake the buns for 15-18 minutes or until golden. Let the banana buns cool on a rack. Enjoy!
