Tortellini soup with salsiccia – A recipe for the most delicious soup with tortellini pasta, salsiccia sausage, carrots, parmesan, and basil. This soup is super easy and flavorful. The tortellini soup starts with cooking salsiccia sausage, followed by sautéing vegetables and spices. Cream, chopped tomatoes, and broth are added, and the tortellini is cooked directly in the soup. I serve it with grated parmesan and fresh basil. You can also add crème fraîche or ricotta, or even fresh mozzarella torn into smaller pieces.
I’ve used spinach and ricotta tortellini, but you can easily substitute it with any other kind. The salsiccia can be replaced with bacon or chorizo, and you can add more vegetables right before serving, such as fresh spinach or chopped kale.

Tortellini soup with salsiccia
Instructions
Fry the salsiccia sausage in a soup pot and transfer it to a bowl.
Sauté onions, garlic, carrots, and celery in the sausage fat. Add oregano, dried chili flakes, and tomato paste, and cook it briefly. Pour in diced tomatoes and add pork broth, heavy cream, and sun-dried tomatoes. Let it simmer under a lid for 10 minutes.
Add tortellini, parmesan, and basil, and simmer for another 5 minutes. Season with salt, pepper, and lemon juice.
Serve the tortellini soup with extra parmesan and basil. Enjoy!
