This is a baked gravy, and it gets so nice and shiny. There are generally two ways to make gravy in general. You can make a baked gravy (like this one) or a gravy with flour thickening. When your pork roast is almost done, and a lot of delicious fat and drippings have dripped into the roasting pan, you should take it out and pour it into a separate bowl. You should let it stand for a while until you can see that the top part hardens. It’s the fat that hardens here.
We don’t want a brown gravy that’s too thick, so we’ll mostly use the drippings and not the fat that’s on top. If you’re having a hard time seeing what’s drippings and what’s fat, you can add a little sauce coloring. You’ll see that only the drippings will turn brown. It’s the drippings and a little of the fat that you need to make the best brown gravy.

Heat the fat in a pan and add the flour. Whisk thoroughly until it comes together. Add a little of the fat/juice and whisk thoroughly.
Continue in the same way with the rest of the fat/juice, whisking thoroughly each time it is added, until you get a glossy sauce of the appropriate consistency. Make sure the sauce is cooked through.
Add the currant jelly, a little sauce colour and, if necessary, a little broth. Season the sauce with salt and pepper.

This brown gravy is the perfect gravy for Christmas Eve. When you’re done roasting the pork, just remember to pour off some of the good drippings and fat. There’s an incredible amount of flavor in this, which you can use to give your gravy lots of flavor.
You probably won’t use all the fat that’s left over from your drippings. Don’t throw it away! Instead, you can use it as fat for, for example, fatty foods. It’s a rye bread dish where you spread fat on top. And it’s just extra delicious when the fat comes from your own pork roast.
