Cottage cheese waffles – Recipe for crispy and delicious sweet waffles made with cottage cheese, cardamom, and lemon zest.
These waffles are wonderfully light, easy to make, and full of flavor. The batter is made by blending cottage cheese, eggs, and milk together, then adding the remaining ingredients and blending again until smooth. The waffles are cooked in a waffle iron until golden and crisp.
I use 250 g of 1.5% cottage cheese, but you can also use 4%. You won’t taste the cottage cheese, as it’s completely blended in. It gives the waffles a soft, moist texture while adding extra protein.
You can enjoy the waffles as they are, perhaps with a sprinkle of sugar, or top them with skyr or whipped cream flavored with vanilla, jam, fresh berries, and fruit. They’re also delicious served with ice cream, chocolate sauce, or Nutella.

Blend cottage cheese, eggs, and milk using an immersion blender. Add flour, sugar, vanilla sugar, baking powder, baking soda, cardamom, salt, and lemon zest. Blend until smooth. Finally, stir in the melted butter. Let the batter rest at room temperature for 30 minutes.
Heat a waffle iron and bake 12–14 waffles. Let them cool on a wire rack. Enjoy!
