Cold raised sesame rolls

Cold raised sesame rolls – A recipe for easy cold-risen rolls with sesame seeds. These sesame rolls are incredibly tasty and simple to bake. The sesame seeds give the rolls a wonderful flavor. They’re sprinkled on the counter where the dough is rolled out, and they’re also sprinkled on top of the dough so that the rolls are fully covered with sesame.

The dough only has 15g of yeast since the rolls are cold-risen, but you can also reduce the rising time by using 25g of yeast and letting the dough rise for 3 hours in the fridge. I call this the easiest and best recipe for morning rolls, as the dough is made the night before, making it quick in the morning when they’re ready to bake.

All the ingredients are ones you likely already have at home. You simply mix the ingredients in a bowl, preferably with a spoon, and put it in the fridge overnight. In other words, you can make these cold-risen rolls without a mixer, making it extra easy. I use skyr in these rolls, but you can also use Greek yogurt or natural yogurt.

Instructions

Dissolve the yeast in water in a bowl, then add skyr and honey. Gradually add flour while stirring, adding salt as well. The dough should be sticky but cohesive, not too dry. Cover with plastic wrap and refrigerate overnight.

The next day, preheat the oven to 250°C. Sprinkle sesame seeds on a surface, pour the dough over it, top with more seeds, and cut into pieces. Bake for about 16-18 minutes until golden. Let cool on a rack before serving. Enjoy!
