Flatbread with Cottage Cheese and Spinach – Recipe for easy, gluten-free, and protein-rich flatbread made with cottage cheese, spinach, and oregano. This cottage cheese flatbread consists of only 5 ingredients: cottage cheese, eggs, spinach, oregano, and salt. All the ingredients are blended into a smooth, lump-free batter, which is poured onto a baking sheet and spread out. Once baked, the flatbread can be cut into squares, which can be used like regular bread, for example, as a sandwich with fillings. The bread can also be used for a panini, though it’s not quite like normal sandwich bread—it’s more like an omelet. It’s also perfect for making wraps with fillings. You all loved my recipe for plain cottage cheese flatbread with just 3 ingredients, so I thought this spinach version would be a great idea.
Here, I’ve made the cottage cheese bread as wraps with fillings like spicy oven-baked chicken, feta dip, spinach, and tomatoes.
I use cottage cheese with 4% fat, but you can also use the one with 1.5% fat. Try my broccoli flatbread recipe as well. Enjoy!

Preheat the oven to 180°C (fan-forced).
Blend cottage cheese, eggs, spinach, salt, and oregano until you have a smooth, lump-free batter. Pour the batter onto a baking sheet lined with parchment paper and spread it evenly in a thin layer. Bake for about 30 minutes until the bread is golden and “dry.”
Let it cool, and carefully remove the parchment paper. Cut the bread into 6 squares or into 3 long pieces, as I have done. The bread may release some moisture, but placing it on a wire rack will help it dry out quickly. Fill the bread with your favorite filling. Enjoy!
