Turtle cookies

Turtle cookies – A recipe for chewy chocolate cookies rolled in pecans and filled with caramel and chocolate. I actually think they are my new favorite cookies.

The recipe is inspired by the recipe from this blog.

Turtle cookies

Heat the oven to 175 C Convection.

Beat the butter and sugar together for 2 minutes. Add the egg yolk while continuing to beat. Mix the all-purpose flour, salt, cocoa, and vanilla sugar together and add it to the dough alternating with the cream. Beat until the dough just comes together.

Divide the dough into 14 equal pieces and roll them into balls. Refrigerate the dough balls for 30 minutes.

Whisk the egg white quickly so it’s just foamy. First, roll the dough balls in the egg white and then in the chopped pecans. Press them lightly into the dough. Place the dough balls on a baking tray lined with baking paper. Make an indentation in the dough balls with a spoon.

Bake them for 10 min.

Make the indentation again just as the cookies come out of the oven.

Melt the fudge caramels with the cream in a small saucepan over low heat. Fill the holes in the cakes with the caramel and decorate with drizzled melted dark chocolate. Refrigerate until the caramel has set. Serve immediately or refrigerate in a plastic container until ready to serve. Enjoy!
