Homemade Digestive Biscuits with Chocolate

Homemade Digestive Biscuits with Chocolate

Combine the whole wheat flour, baking powder, salt and confectioner’s sugar in a bowl. Crumble the butter into it. Using the milk, form into an even and cohesive dough. The dough should be slightly sticky and wet. Roll out the dough between 2 pieces of baking paper so it’s about 0.5 cm thick. Refrigerate the dough for 10 minutes.

Heat the oven to 180 C convection.

Cut the dough into circles of 6-7 cm in diameter. Use a scone cutter or a glass. Place them on a baking sheet lined with baking paper. Punch little holes with a fork in each dough circle. Bake the biscuits for about 20 minutes, but keep a close eye on them so they don’t brown too much. Let the biscuits cool on a rack.

Melt the chocolate. Put a teaspoon of chocolate on each biscuit and spread it around. Refrigerate the biscuits until the chocolate has set. Enjoy!
