Healthier oatmeal truffles

Happy December 15th. Healthier oatmeal truffles with dates, orange and coffee—a slightly healthier alternative to classic oatmeal truffles. These oatmeal truffles can easily be made a few days in advance. If you would like to try some other healthier truffles, you can try my Nutella truffles or Snickers truffles. Or my date bars with apricots and nuts. Enjoy!

Healthier oatmeal truffles (makes about 25)

Instructions

Healthier oatmeal truffles

Put all the ingredients in a blender or food processor and pulse until mixed. You should be able to roll the mixture into truffles, so if it’s a little too dry, add a little more coffee or orange juice.

Roll the mixture into truffles and roll the truffles in the desiccated coconut. Store the oatmeal truffles in the refrigerator.
