Cold-raised bread rolls with oatmeal

Cold-raised bread rolls with oatmeal that are crispy and airy. The rolls are heavily inspired by my mine crispy and airy bread rolls. These bread rolls are very popular—actually they’re the most popular recipe on the blog. The recipe for the crispy and airy buns is made with a food mixer, but as several of you have requested a recipe without the use of a food mixer, I tried to make them by hand to see if the dough can be kneaded without a machine. And it can! I used both my hands and a wooden spoon. I used ordinary all-purpose flour and oatmeal in the dough, which gives a nice taste and crispy rolls. You can use whatever type of flour you have at home. The bread rolls can also be made without being cold-raised, just add 50 g of yeast and let the dough rise for 1 hour. Enjoy!

Cold-raised bread rolls with oatmeal

Dissolve the yeast in the tepid water in a large bowl. Add the oatmeal and leave it to soak up the liquid for about 10 minutes. Add the flour, honey and salt and stir it with a wooden spoon until the dough has an even consistency. Don’t knead the dough at this stage. It should look just like oatmeal. Let the dough rest for 15 minutes. Then knead the dough with your hands (even if the dough is sticky) or with a wooden spoon. It will take 10-15 minutes before the dough is pliant and smooth.

Transfer the dough to another bowl or container greased with a little olive oil. Cover the dough with a lid or cling film and allow the dough to rise in the refrigerator overnight. Heat the oven to 250 C convection with a baking tray inside. Carefully pour the dough onto a floured surface and sprinkle some extra flour on the dough. Divide the dough into equal pieces with a knife or spatula (without working the dough too much). Place the rolls on a piece of baking parchment which you then pull onto the hot baking tray. Bake the bread rolls in the center of the oven for 15-18 minutes. They should be crispy and golden, and sound hollow when you tap them. Serve them immediately when they taste best. Enjoy!
