Chocolate chunk cookies

These cookies, or rather chocolate chunk cookies, are the best cookies I have ever baked. They are chewy, crispy, soft and absolutely perfect. I’ve added a lot of chopped chocolate, both dark and light and it tastes wonderful with that mix. I have baked a lot of cookies, but I have never really found the perfect recipe until now! When I cook cookies, I always bake double portions, so I can freeze one half down (in balls) and quickly bake them and serve them for my guests. Then it’s easy to serve freshly baked cookies. Enjoy!

Mix sugar,  brown sugar, salt and vanilla sugar together in a bowl. Add the melted butter and stir it well. Stir one egg at a time. Mix the flour and baking powder together and sift it into the bowl. Stir it all together into a uniform and soft dough. Finally add chopped chocolate. Refrigerate for 1 hour.

Turn on the oven at 180 C hot air.

Form 25 equal balls with e.g. and ice cream spoon. Place the balls on a baking sheet lined with baking paper. Make sure there is a good amount of space between each ball as they float out when baked. Bake the cookies for approx. 15 minutes until golden and crispy around the edge but still soft in the middle. Allow the cookies to cool on a rack and serve them just right away. You can sprinkle a little bit of sea salt on each cookie. Enjoy.
